I don't know about you, but it's too hot to heat up the kitchen right now! We are in survival mode as far as meal prep, and since our egg plate is running over, we're eating egg salad a lot around here.
I grew up with the classic egg salad - mayo, mustard, celery, onion, dill pickles, and maybe some dill. That's it! Don't get me wrong, this is still a great combination, but I've learned of a new way to kick it up a notch and add some additional flavor. Horseradish!
I would never have thought to add horseradish to egg salad until our cousin was living with us after Hurricane Harvey. We had a lot of eggs to use, and she made this amazing egg salad that blew me away. Wow, who knew one little ingredient could change everything.
Now, not everyone is going to like horseradish, but trust me when I say this really does add to the overall flavor.
